Erythritol (meso-1,2,3,4-butanetetrol) is a sugar substitute belonging to the sugar alcohols. The sweetness of Erythritol is only about 60-70 percent in relation to table sugar (sucrose). In Europe, Erythritol has been authorized as a food additive since 2006, with no quantitative restrictions.

Erythritol, E968 (sugar alcohols) is offered in different trade names. In its natural form, Erythritol is found in fruits such as strawberries, corn, fruits, plums, mushrooms, pistachios and cheese. For the food and beverage industry, the required quantities are produced by fermentation like beer or cheese.

Erythritol has a high digestive tolerance, has no effect on insulin levels and contains almost no calories. An ideal sugar substitute for diabetics or people who suffer from fructose intolerance or who would like to eat vegan.
